Matthew Segal is bagel obsessive.
Upon arriving in Seattle, Matthew worked as a sushi chef; when his attention turned to bagels he became obsessed with lox. During research trips to New York, he learned the cold-smoked fish the city celebrates is normally made with farmed salmon. In his quest to perfect his own lox recipe, he chose to use wild king salmon from the Pacific Ocean, as it’s more flavorful than the farm-raised variety.
Creating nova style lox is a labor-intensive process, and his wild-caught King Salmon and other fish take many days of work to go from boat to bagel.

When you become a member of Loxsmith Fish Sampler Series, you’ll receive a rotating selection of cold cured fish, specialty bagels, and specialty cream cheeses. All of Loxsmith’s fish are cold-smoked; unlike hot smoking, you're not actually cooking the fish, you’re simply creating that unbeatable smokey flavor. Locksmith is known for their lox, especially their specialty fish — salmon pastrami, whitefish, smoked sablefish. With a darker crust [from the lye], Loxsmith bagels are more pretzel-like than others. Try out these delectable selections on uniquely delicious bagels with unique sides of specialty cream cheese.

1/2 lb cold smoked Nova lox
1/2 lb whitefish salad
1/4 lb smoked sturgeon
1/4 lb kippered salmon (hot smoked lox)
1/4 lb smoked sable (black cod)
all served alongside fresh bagels and cream cheeses including: nova, kimchi, plain, and scallion.

How it Works
When can I get my goods | If you sign up within a given calendar month (or have a recurring charge on a given month), you will be eligible to receive goods in the next month. For example, if you signed up in July, the first month you’ll be eligible to receive your subscription goods will be August, etc.
When do I get billed | When you sign up for a subscription, you will have a recurring membership. Your first charge will occur on the day you sign up, and you will have a recurring charge every subsequent month (unless you pause or cancel your subscription)
How do I manage my subscription | After signing up, you can manage your subscription at Table22 Member Portal, where you can skip a month, pause your subscription, cancel or update billing & other account information with the click of a button!
How do I get my goods | You will receive an email and text message at the beginning of the month confirming your delivery date.
